Processing and Production
Our Production Team bridges the gap between cutting edge technologies and old-world production techniques to produce excellent products time and again. Our Production Team undergoes rigorous training and certifications on all steps of the production process including:
- Batching – where all liquid and dry ingredients are mixed and the homogenization process begins
- Pre-refining – consistent product wetting and particle reduction allow flavor and aroma development to match the required plasticity and fineness to downstream finish refiners
- Finish Refining – continued flavor development occurs during the final particle reduction process when the pre-refined paste is passed through the roll gaps at high pressures
- Conching – the final mixing, shearing, flavor and aroma development take place during the liquefaction process, resulting in a bulk confectionery coating with a structure conducive to the end use
- Shaping/Packaging – bulk product can then be shaped into wafers, ribbons, chunks or a variety of drops and packaged into cases or shipped directly as bulk liquid for distribution
